This interesting twist of Paleo Pancake recipe is leaning on the LCHF side, but at the same time it offers great flavor and balanced macronutrients. It can be served as breakfast, but it offers enough energy to be a full lunch if you add a bowl of green salad to it. Quick and easy to prepare, yet satisfying and delicious.
- 2 medium eggs
- 1 tbsp coconut oil
- 1/2 cup almond flour
- 1 cup baby spinach
- 1 small tomato(chopped)
- 1/2 cup ground turkey
- 1/2 tsp baking soda
- 1 tsp chopped parsley
- Sea salt, black pepper to taste
How to make Paleo pancakes?
Sauté ground turkey in a frying pan for 5 minutes in coconut oil. Remove from pan and set aside.
Whip the eggs in a bowl and add almond flour and baking soda. Mix well.
Add salt, pepper,chopped vegetables and the cooked turkey.
Place pancake rings into your frying pan, pour the mixture into two rings and cook for 2 minutes on medium heat.
Using a spatula turn your pancake and cook for a further minute.
Season a little more or add some chopped herbs and salad.
