Chicken breasts are packed with protein and they are great for an evening meal. But many people complain that it’s difficult to prepare them due to chicken often becoming dry. It is easy to solve by making a delicious marinade, full of healthy fats and every bite will be a total pleasure!
You can combine it with any green vegetables or your favorite Paleo salad. Of course, stay away from starchy vegetables such as potatoes!
- 1 tbsp coconut oil
- 2 cloves garlic, chopped
- 1 tbsp almond butter
- 2 tbsp raw honey
- 1/5 tsp ginger
- 1 tsp cinnamon
- Himalayan salt and black pepper to taste
- 1 medium chicken breast (about 4oz)
- 1 cup chopped lettuce
- 4 inches cucumber, diced
- Handful of radishes, sliced thinly
- 1 tbsp chopped fresh onion or 4 green onions
- 1 tbsp apple cider vinegar
- 1 tbsp Extra Virgin olive oil
How to make a Paleo chicken salad?
Mix all the ingredients except the salad items, pour over the chicken and marinate the chicken for at least 30 minutes in the refrigerator.
Grill the chicken in a grilling pan or under a regular grill, and keep adding some of the marinade in the process to keep it even more moist and juicy. You need to grill both sides, around 6-8 minutes per side.
In the meantime, chop the lettuce and other salad ingredients and season it to your liking.
Slice the grilled chicken and place on top of the salad, and sprinkle with chopped fresh green onion.
